Our lambs are raised with love and care, and finished on pasture. Pastures include a wide variety of grasses, legumes, and forbs, which give pastured lamb greater depth of flavor. Pastured lamb also tends to be leaner than grain-finished lamb.
A half share includes one side of the lamb: one shoulder, one leg, one side of ribs, one loin or set of loin chops, and one shank. We coordinate butcher, transport to and from the butcher. Half-share custom cuts will be limited to 2 package options:
- Roast package: Leg of lamb, shoulder roast, and chops, with a limited quantity of ground lamb (offal optional)
- Ground package: Ground lamb, stew meat, plus chops and lollipop chops (offal optional)
Price includes butcher cost. Butcher reserved for October 2024.
Weights vary. Target half hanging weight: 25 lb.
